Southern Mac & Cheese

- 1/2 pound of elbow macaroni
- 4 tablespoons (1/2 stick) of butter, cut up into pieces
- 2 cups or more of grated cheddar cheese
- 1 cup of milk
- 1/2 cup of sour cream
- 3 eggs (optional)
- salt and pepper to taste
Method:
- Preheat oven to 350 degrees F. Cook elbow macaroni according to package directions and drain.
- In a bowl, toss the hot pasta with bits of butter and 2 cups of cheese until the butter has melted.
- In a separate bowl, beat the eggs and combine with sour cream, salt, and pepper. Add this mixture to the pasta and stir to combine.
- Transfer the pasta to a greased casserole dish. Pour in the milk, then bake for 30 to 45 minutes. Halfway through the baking time, once the milk has been absorbed, you may wish to top with additional cheese.
