creamy Mac & Cheese
This recipe, which I have found on the Internet in various places, has been attributed to Cook's Illustrated. A similar recipe can be found at the Food Network.

- 1/2 pound macaroni
- 4 tablespoons butter
- 2 eggs
- 12 ounces evaporated milk
- dash of hot sauce
- 1 teaspoon dry mustard mixed with 1 teaspoon water
- salt and pepper
- 12 ounces cheese of your choice (3 cups shredded)
Method:
- Cook macaroni until al dente, then drain and return to the pot. Toss the hot pasta with butter.
- In separate bowl, mix the eggs, evaporated milk, hot sauce, mustard, salt, and pepper.
- Pour the egg mixture over the buttered noodles. Add the cheese and stir over low heat for a few minutes or until the cheese melts and the sauce becomes creamy.
