Classic baked Macaroni & Cheese
Adapted from the Neelys' Macaroni and Cheese with Potato Chip Crust

- 1/2 pound of macaroni
- 4 tablespoons of butter
- 4 tablespoons of flour
- 2 cups of milk
- salt, pepper, and other seasonings of your choice
- 2 cups of grated cheddar cheese
- cooked bacon bits (optional)
- crushed potato chips
Method:
- Preheat the oven to 350 degrees Fahrenheit. Cook the macaroni: Bring a pot of water to a boil. Add enough salt so that it is a salty as the sea. Add the macaroni, let the water come back up to a boil, and let it cook for as long as the package directs. Drain and set aside.
- Make a roux: Melt the butter and sprinkle in an equal amount of flour. Stir constantly to incorporate the flour and form a uniform paste.
- Make a white sauce: Add milk all at once to avoid lumps. Stir constantly and let it simmer until the sauce thickens. Add seasonings while stirring if desired.
- Make a cheese sauce: Turn off the heat. Stir cheese into the white sauce.
- Bring the pasta, cheese sauce, and cooked bacon bits together. Stir to incorporate, then pour the mixture into a casserole dish. Top with enough potato chips to cover and bake for about half an hour.
